Tenuta Aurora is an organic and biodynamic estate in Grotte di Castro (Province of Viterbo), nestled in an unspoiled landscape by Lake Bolsena. The unique microclimate and volcanic soils have shaped olive cultivation here for centuries, giving our oil its distinctive character. We follow the strict principles of biodynamic farming, rooted in the impulses of Rudolf Steiner from 1924. Our Demeter and Bioagricert certifications stand for transparent origin, consistent sustainability, and reliable quality.

Our olive groves extend over around 45 hectares and are planted with the traditional varieties Canino, Leccino, and Frantoio. Each grove is tended according to its location, with careful attention to soil life, humus formation, and the varietal characteristics of the trees.

Harvesting is carried out gently and at the optimal stage of ripeness, so the fruit reaches our own mill in the best possible condition. There, we process exclusively ourselves – cold-pressed and without any third-party involvement.

This seamless control from tree to bottle preserves the delicate aromas and guarantees an extra virgin olive oil with a clear, authentic profile. For added assurance, we regularly send samples to independent laboratories for analysis; only certified batches are released for sale.


Our goal is to work as sustainably as possible and to preserve the natural fertility of our soils. To achieve this, we rely consistently on compost made from manure sourced from certified organic livestock and from organic by-products of our own estate. This provides the trees with precisely the nutrients they need, without disrupting the natural balance. In addition, we use biodynamic preparations that stimulate soil life and strengthen the harmony between earth, plant, and environment. We completely avoid chemical pesticides and herbicides. Instead, we regulate weeds naturally: cover crops are shredded after growth and used as mulch—protecting the soil from erosion, retaining moisture, and enriching soil life. The result is vigorous trees, vibrant soils, and an olive oil that authentically reflects the character of this unique landscape.

For us, quality is a verifiable standard, not just a promise. Sensory clarity, purity of origin, and transparency in every step of the process are binding principles. At the same time, our work is constantly evolving: we continuously refine methods, energy flows, and processes – with the aim of working ever more resource-efficiently and preserving the natural foundations of our oil.
