Abbiamo preparato tutta l’attrezzatura, disinfettato e pulito a specchio il nostro mulino, predisposto tutti gli spazi e le maestranze, istruito ed ascoltato su nuove procedure.
Stiamo monitorando quotidianamente ogni zona della nostra tenuta per cogliere le nostre preziose olive esattamente quando la natura ci dirà che sono al grado di maturazione ottimale per le caratteristiche che vogliamo dal nostro nettare verde.
Solo quando il momento sarà perfetto avvieremo con dolcezza la raccolta manuale del frutto del nostro lavoro.
Ma ora attendiamo, guardiamo e rispettiamo !

Nothing is predictable, nothing can be conditioned, nothing in nature can be controlled!

This is our philosophy, and nature thanks us every year by rewarding us!
We have prepared all the equipment, disinfected and cleaned our mill like a mirror, prepared all the spaces and workers, educated and listened to new procedures.
We are monitoring every area of our estate on a daily basis to pick our precious olives exactly when nature tells us that they are at the optimal degree of ripeness for the characteristics we want from our green nectar.
Only when the moment is perfect will we gently start the manual harvesting of the fruit of our work.
But now we wait, watch and respect!

Nichts ist vorhersehbar, nichts kann konditioniert, nichts in der Natur kontrolliert werden!

Wir haben alle Geräte vorbereitet, unsere Mühle wie ein Spiegel desinfiziert und gereinigt, alle Räume und Arbeiter vorbereitet, neue Verfahren geschult und angehört.
Wir überwachen jeden Bereich unseres Anwesens täglich, um unsere kostbaren Oliven genau dann zu pflücken, wenn die Natur uns sagt, dass sie den optimalen Reifegrad für die Eigenschaften haben, die wir von unserem grünen Nektar erwarten.
Erst wenn der Moment perfekt ist, beginnen wir behutsam mit der manuellen Ernte der Früchte unserer Arbeit.
Aber jetzt warten wir, beobachten und respektieren!

Ce n’est que lorsque le moment sera parfait que nous commencerons en douceur la récolte manuelle du fruit de notre travail.
